I'm thinking of driving from Texas to California, how many days should I be setting aside for the drive including sight seeing?

A week or so would give you time to sample 66 to California--from Amarillo.  10 days would be better.  Texas has a lot to offer too.  Sounds like you are very early in the process.  I'd sample Texas on-line first. 

An even better idea would be to start your 66 trip in, say, Tulsa OK.  That would give you a much-better perspective on the road but would take additional time.  There's more in the Travel section on my website, referenced elsewhere.
