Three weeks would allow you to see Route 66, and take in the other attractions. This would include two days on I-55 and I-57 from Baton Rouge to Chicago. Allowing a day there, a recommended 14-day trip along Route 66, plus a separate day for each site you mentioned, and three long Interstate days in getting back comes to 20 days.
Obviously you could speed up the Route 66 trip, but there’s a lot to see and experience, and you would miss much of it.
If this is too long, perhaps you could see the central and western 2/3 of Route 66 by starting it in Joplin MO, one-day from you on I-49 (and US 71).
